Pat the roast completely dry with paper towels. Science tip: A dry surface is the secret to a beautiful crust if you choose to sear it! Rub the avocado oil all over the meat, then generously massage the thyme, smoked paprika, and black pepper into all sides.
2. Build the Flavor Bed
Place the thickly sliced onions and smashed garlic cloves in the bottom of your slow cooker.
Science tip: Placing the vegetables on the bottom creates a protective “rack” that keeps the meat from direct contact with the heating element, preventing scorching while infusing the meat with incredible flavor from the bottom up!
3. The Optional (But Wonderful) Sear
If you have 5 extra minutes, heat a skillet over medium-high heat and sear the roast for 2 minutes per side until beautifully browned. This triggers the Maillard reaction, creating a deep, caramelized flavor that a slow cooker alone cannot achieve. Then, transfer it to the crockpot. (If you’re short on time, just skip this step—it will still be delicious!)
4. The Slow Cook Magic
Place the seasoned roast directly on top of the onion and garlic bed. Pour the low-sodium beef broth around the edges (try not to wash the spices right off the meat). Cover and cook on LOW for 6 to 8 hours.
