Ingredients
For the Pie Crust
- 2½ cups (315 g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup (225 g) cold unsalted butter, cubed
- 6–8 tbsp ice water
For the Filling
- 8–10 large apples (Granny Smith or Honeycrisp), peeled and sliced
- ¾ cup (150 g) brown sugar
- ¼ cup (50 g) granulated sugar
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- 2 tbsp all-purpose flour or cornstarch
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 tbsp lemon juice
For the Top
- 1 beaten egg (for egg wash)
- Coarse sugar (optional)
Instructions
- Combine the flour, salt, and sugar in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add the ice water until the dough comes together. Divide into two discs, wrap, and chill for at least 1 hour.
- In a large bowl, mix the sliced apples with the brown sugar, granulated sugar, cinnamon, nutmeg, flour, vanilla, and lemon juice.
- Roll out one dough disc and line a deep pie dish. Fill with the apple mixture and dot with butter.
